No, no, no!  You got it all wrong!  We don't bite the heads off, we use our fingers, then we suck the heads!  And we would never eat the dead ones!

You must be from someplace weird, like Tennessee!  You know, one of those places with small schools that field a great basketball team but can't afford to play football.

I understand that to make a proper crawfish etouffee one must include the NASTY yellow fat attached to the tail meat in the dish. I will gladly eat it cooked into something, but don't make me eat it wit' da meat! :shock::P

Like lobster, crabs and crawfish must be boiled or steamed live.  That's why crawfish (like lobster) still has the head attached, so it has to be pinched (never bitten) off.  Many people then suck the fat out of the neck area before peeling and eating the tail.  (A real Cajun would never steam anything, including vegetables.)

Those that were dead prior to boiling have a different color, and the meat is mealy rather than flaky or firm.  Not only do they not taste very good, they can make you quite sick.

This is not an issue with shrimp and fish, BTW, but they do have to be kept on ice up to the moment they are boiled.

I prefer shrimp.  I eat crabs, but I won't buy them myself.  I will eat crawfish in a stew, jambalaya, or etouffee if I have to, but not boiled.  I will not eat oysters or clams, but will eat any kind of fish.

I like alligator, but would never eat frogs' legs!

By the way, a few years ago, the Louisiana State football team was going to play the University of Florida "Gators".  For their pregame meal, the LSU "Tigers" at ALLIGATOR!!

We are Cajun, not southern.  We just happen to live in the south.  You can see a map of Acadiana at Wikipedia.

The people and culture of Acadiana bear virtually no resemblance to the rest of the south.  We do, however, eat grits.

I agree! You are a world unto yourselves! lol When you look at all the names of the towns and parishes, and just that you use the word "parish" instead of county, shows how heavily the area is influenced by the Catholic Church.

Is there a possibility of Vatican sending a team to Olympics? :) I just read in the ZENIT of an article about the Pope John Paul II Sports foundation. I just wonder what if the Vatican will send an all-male Olympic team? :D For sure the late JOhn Paul II would love to compete in skiing.. :P

There are few actual citizens of the The Holy See (the actual name of the country).  According to the CIA World Factbook, the estimated population is 824 as of July 2008, and would include the pope and cardinals (who hold dual citizenship with their own countries), the Swiss Guard, and religious who are household staff and live on the premises. In addition, about 3000 people who live outside the Vatican work there.  As representatives of the Holy See, cardinals have diplomatic immunity although it is seldom exercised.  They do, however, have the right to carry diplomatic pouches which are not subject to customs inspection.

Additional information on the Vatican City-State is available at their web site.

By the way, the Vatican measures .44 hectares and is about 7/10ths the size of the National Mall in Washington, DC.  In addition, the Vatican has territorial jurisdiction over 23 sites in Rome and five outside of Rome, including the major basilicas and the pope's summer residence at Castel Gandolfo.

So it's highly unlikely any Olympic team could be mounted by the Vatican.  For the most part, "athletes" would be priests and nuns of an advanced age, and even though Pope Benedict is quite athletic, at 80+ years old he would need Divine Intervention to out-swim Michael Phelps or ski at a world-class level.

While I'm not recommending this for the Holy Father, of course, but I suppose if you put a young guy in a pool full of 'gators, or in the case of that fellow from Maine, a pool full of ICE COLD MAINE WATAH, you'd be giving Michael Phelps or Prez Bush #41 using his Cigarette speed boat around Kennebunkport, both a good run.

I hear that a Catholic fellow named Jimmy Buffett's trying to start up a Jamaican Dogsled Team to replace the bobsledders (who've gone back to dominating the 100 meters.) Since the Vatican has a lot of diplomatic clout, why don't we see if we can get the Winter Olympics to start up a dogsled team competition and make that Catholic guy, Buffett, its first coach.

Yeah, imagine Buffett of all people carrying the Vatican flag for its first march into an Olympic stadium. Jus' kiddin' mon. :D
