My question is: since she was never baptized, would we be able to get a process called the Pauline Privilege?
The Pauline Priviledge applies to situations where the marriage of two unbaptized people ends because one of them is baptized.
For example, if a Muslim is baptized Christian and her spouse divorces her because of her conversion, the Pauline Priviledge would most likely apply.
There are some very specific legalities involved, so it would be best to consult with a priest. However, if your wife is still not baptized, the Pauline Priviledge certainly would not apply.
If you are seeking to annul your marriage to her, a Defect of Form would apply. If you are seeking to have her first marriage decared null in order that your marriage to her can be validated by the Church, you will need to go through the full Tribunal process. But again, marriage situations can be very complex so you really should consult a priest or qualified lay advocate.
