My Messianic Jewish friend mentioned in another post sent me an article about this topic from her perspectice. The author admits that there is no clear historical record and that, by the 2nd century, the practice of the Lord's Table was widespread. His belief, though, is that it was instituted to get rid of the "Jewish" Passover and create something new that did not resemble anything "Jewish."
ARE there any writings clearly indicating how and why the two elements of the Passover, the unleavened bread and the cup of blessing (the 3rd of 4 cups) became THE bread and THE wine? I'd love to be able to explain it to her.
Jill

Hi Jill,
Excellent question. I think Scott Hahn's article, "The Hunt for the Fourth Cup" would be excellent for this purpose:

Also (in a larger sense), articles that tie in the Sacrifice of the Mass to the older Jewish sacrificial system, might be good. I have several of those on this web page:
The Eucharist & the Sacrifice of the Mass
