I am reading Pope Benedict XVI Sacrament of Charity (Post Synodal Apostolic Exhortation of 2007) and was taken by the small section of the Eucharist and Eschatology. I work with Confirmation and Youth Ministry and would like to help the youth better understand that "the eucharistic banquet is a real foretaste of the final banquet foretold by the prophets and described in the New Testament as "the marriage-feast of the Lamb" to be celebrated in the joy of the communion of saints."

What other resources are there the goes deeper into the Eschatological dimension of the Eucharist?

I would suggest Scott Hahn's The Lamb's Supper:  The Mass as Heaven on Earth.  It is extremely well written and well researched.
