How did Ember days originate in the Church and how do we observe them?
Thanks

Wonderful ! thanks for the link Ali !,
That's just what I was looking for, it is much clearer to me now. It is about fasting days and prayer. You can find Ember days if you click on all the seasons of the year. For instance tomorrow is an Ember day.

I never heard of fasting days and thanking God for the gift of nature referred to a Ember days.
Many thanks.

The Catholic Encyclopedia has a good article which gives the history of Ember Days. They are still celebrated by the Church actually, but the significance has lessened and the formal liturgies have been discontinued. However, they are still listed in the Ordo and optional masses are available for use on those days. The Book of Blessings also contains special blessings which can be used on Ember Days.
Many of the Church's liturgies were once celebrated with greater regularity. For example, as a kid I remember Benediction of the Blessed Sacrament taking place every Sunday after the 11 a.m. mass. It doesn't make a lot of sense, if you stop and think about it, to be blessed with the Blessed Sacrament right after going to communion! What greater blessing could there be? So the celebration of Benediction in conjunction with mass is now discouraged, so in most places it doesn't happen very often.
